Canet is situated at the highest altitude in Costa Rica's Tarrazu coffee plantation. The region is densely populated with fruit plantations, primarily growing passionfruit. Coffee plants are limited to a specific area where they receive special care, and only ripe red coffee cherries are selected.

The raisin honey process is a double fermentation honey process. The coffee cherries are first dried to a raisin-like state and then undertake a fermentation process after the removal of the fruit pulp. This method enhances the fermentation flavors and preserves a higher amount of fruit pulp compared to other honey processes. The 100% fruit pulp honey processing truly brings out the raisin flavor. It is a very sweet processing method that offers a taste reminiscent of white wine with balanced acidity.
